  • Proven experience in an F&B supervisory or senior service role within a luxury lodge, hotel, or fine dining environment
  • Strong guest service skills with a warm, professional, and personalised approach
  • Ability to supervise, motivate, and develop a team of waiters, bartenders, and service assistants
  • Solid knowledge of five-star food and beverage service standards and dining etiquette
  • Strong understanding of HACCP, food safety, hygiene, and safe food handling practices
  • Experience with stock control, requisitions, breakage and wastage monitoring
  • Excellent communication, organisational, and time-management skills
  • Cultural awareness and emotional intelligence with the ability to work in a diverse team environment
  • Flexible and willing to work shift hours including early mornings, evenings, weekends, and public holidays
  • Comfortable living and working in a remote bush environment
Core Responsibilities:
  • Deliver personalised, five-star dining experiences across all meal periods including restaurant, bar, boma dinners, bush dinners, in-room dining, and safari meals
  • Maintain a visible presence during service to ensure standards are consistently met at all times
  • Supervise waiters, bartenders, hosts, and service assistants on shift, ensuring correct grooming, uniform standards, and professional conduct
  • Coordinate closely with the kitchen, front office, and safari teams to ensure seamless service delivery
  • Conduct pre-service briefings and post-service debriefs with the service team
  • Engage with guests to ensure satisfaction, manage dietary requirements, and handle feedback professionally and discreetly
  • Assist with onboarding, training, and ongoing coaching of F&B staff
  • Support performance management and address minor disciplinary matters in line with company policy
  • Assist with stock control, requisitions, stock rotation, and the monitoring of breakages and wastage
  • Ensure full compliance with HACCP, food safety, and hygiene standards across all F&B service areas
  • Assist with daily reports, service checklists, handovers, and operational reporting
